40 ml Ketel One Citroen
30 ml Peach Acid Solution*
10 ml Sugar Syrup 1,5:1
4 dash Peychaud´s Bitters
80 ml London Essence White Peach & Jasmine
Fresh Peach & Edible Flower
Technique: Shake
*Peach Acid Solution
500 g White Peach Purée
500 g Filtered Water
15 g Citric Acid
15 g Tartaric Acid
5 g Ascorbic Acid
Mix all ingredients together until acids are fully dissolved. Then filter them through the cheesecloth, bottle the solution and keep it refrigerated.
