  • 30 ml Johnnie Walker Black Label

  • 20 ml Mango Mead & Akvavit*

  • 15 ml Spruce Syrup

  • 15 ml Citrus Stock Water**

  • 60 ml Mineral Water

  • Method: Carbonated at 40 psi

  • Garnish: Mango Needle Veil***

  • Glass: Firefly by Eva Polgary


*Ingredient - Mango Mead & Akvavit

  • 600 g Mead

  • 100 g Bareksten Akvavit

  • 150 g Dried Mango

Preparation:

Put ingredients in the vacuum satchel and let it sous-vide for 2 hours at 65 °C. Then filter it.


**Ingredient - Citrus Stock Water

  • 1000 g Citric Blend 9:1

  • 500 g Leftover Lime/Lemon

Preparation:

Put fresh pressed citrus husks into citric blend for quick 1 hour infusion in fridge. Then filter it and bottle.


***Ingredient - Mango Needle Veil

  • 150 g Leftover Mango

  • 150 g Filtered Water

  • 100 g Spruce Syrup

  • 20 g Agar Agar

  • Green Coloring

Preparation:

Mix the ingredients in a blender without agar until smooth. After that, put all the ingredients with agar in the pot. Bring to boil and stir it through whole process and then remove from heat. Pour it onto the warm tray and let it cool down. After that put into the refrigerator and when its settled, cut into circles, store in a plastic box with a moisture absorber and refrigerate.
