Cold Buttered Rum.

Cold Buttered Rum

  • 50 ml Cocoa Butter fatwashed Diplomático Mantuano *

  • 15 ml Balance Red

  • 20 ml Tonka Sugarcane syrup

  • 5 ml Coconut Vinegar

  • Tonka Beans Perfume / Oil

  • Technique: Stir

*Cocoa Butter fatwashed Diplomático Mantuano

  • 700 g Diplomático Mantuano

  • 200 g Cocoa Butter

Dissolve the fat using a pan or a water bath. When dissolved pour into the selected alcohol of choice. Stir well several times and let cool. Place in the freezer for 12 hours. If the fat is condensed, frozen and separated from the alcohol after 12 hours, drain the alcohol through cheesecloth or a coffee filter and bottle it. The resulting product is left with a very delicate oily texture with traces of the chosen fats aroma.


Fat Washing

This particular method of alcoholic beverages can be used with any soluble fat from cocoa butter, butter, coconut oil, to bacon or greaves for example in combination with rum, whiskey or vodka. 

The ratio of alcohol to fat is about 700 g of alcohol per 200 g of fat.
