Organic Acids Solutions.
When creating organic acids solutions, one can combine all known and available acids used in the food industry.
Each acid has its own specific taste and range, therefore it is fairly simple to achieve an exceptional product. A well-known example is the combination of citric and malic acid, which when combined resemble the taste of lime, or tartaric and lactic acid which are typical in champagne.
There are several acids solutions you can use while preparing your ingredient or cocktail.
Citric acid - primarily located within lemons. The acid carries a light lemony flavour. Acidity created using this particular variety of acid is powerful yet quick to disappear.
Malic acid - found in apples and when tasted slightly resembles green apples. Acidity is milder and lasts longer.
Tartaric acid - extracted from grapes and tastes much like sour grapes. The acidity of tartaric acid is gentler and fruity.
Lactic acid - produced during lactic fermentation of sugars, in milk, cheese and sauerkraut.
Ascorbic acid - Is in essence vitamin C, and offers a bland taste, bland acidity. Ascorbic acid is usually applied to fruits in order to prevent oxidation and browning from occurring.
Acetic acid - memorable due to its characteristically sour taste and pungent aroma. The acid is a byproduct created during the fermentation of for example Kombucha.
Ingredient - CitrusHerb Cordial
Preparation: Load all ingredients, excluding sugar and citrus peels, into a container and blend using a hand mixer. Add citrus peel and let the cordial macerate in a refrigerator for 24 hours. After straining, add sugar and stir until completely dissolved. Bottle and store in the cold.

20 ml Plymouth
20 ml Plymouth Navy Strength
30 ml CitrusHerb Cordial
